It is harvested, processed, sun-dried, roasted, and packed on the same farm where this single-source coffee is carefully cultivated — Finca La Carmen, in the Mameyes neighborhood of Jayuya, Puerto Rico. Grain is stored in a parchment state at a humidity level of 11-12%, left to rest for 3 months before milling. Unique freshness and aroma result from being piled, roasted, and packed on-farm, as ordered.
